Grilled Tuna Bento Bowl

Recipe makes 4 servings

Ingredients:

  • BOWL
    • 1 lb. yellowfin tuna steaks
    • Salt
    • Pepper
    • 1 cup rice
    • 1 cucumber, diced
    • 1 mango, diced
    • Pickled ginger
    • 1 avocado, slice
  • SPICY MAYO
    • ¼ cup mayonnaise, light
    • 1 tbsp sriracha
    • 1 tbsp soy sauce
    • 1 tsp sesame oil

Instructions:

  1. Heat grill to high (~500F) as you prepare the tuna steaks.
  2. Remove thawed tuna steaks from the package and pat dry. Sprinkle both sides with salt and pepper. When the grill is heated, grill each side for 1-2 minutes (1 minute for a more rare center, 2 minutes for more well-done). Cover and set aside when done.
  3. Cook the rice according to instructions on the package.
  4. Add the spicy mayo ingredients to a bowl and whisk until smooth- or add to a jar and shake.
  5. When ready to assemble the bowls, slice the tuna steaks.
  6. Place some rice in a bowl, followed by the cucumber, mango, pickled ginger, avocado, and sliced tuna steaks.
  7. Drizzle with the spicy mayo and enjoy!
