Lobster Roe

All female lobsters contain roe which are unfertilized eggs located inside their shell. A female lobster will take about a minute or two more to cook due to the roe. After you cook and break open the lobsters, you will be able to remove and enjoy this delicacy. The roe is typically used as a garnish or can be mixed with butter or mayo to make your lobster rolls even more delicious!
