Filet Mignons are a cut of beef from the narrow front portion of a cow’s tenderloin muscle, also known as the psoas major. The tenderloin muscle of a cow is a non-weight bearing area and it remains relatively inactive, which means it contains less connective tissue and produces a more tender cut. Filet Mignons have lower fat content, which can make them less flavorful than cuts such as Ribeyes, New York Strips and Sirloins. What they lack in fat content, they make up for it in natural tenderness.
