This easy appetizer is the perfect warm-weather treat! You’ll feel like you’re sitting dockside with each bite of these handheld lobster rolls drizzled with garlic butter.

Servings: about 12 skewers
Ingredients:
- 4 tablespoons of butter, divided
- About 4 slices of sour dough bread, cut 1-inch thick
- 1 large garlic clove, finely chopped (plus a splash of olive oil, for sautéing)
- 2 tablespoons of parsley, plus a little more for garnish
- 1-2 cups of cooked lobster meat from Legal Sea Foods Online Shop, cut into large chunks
- Toothpicks, for skewers
Instructions:
- Divide one tablespoon of softened butter among each slice of the sourdough (you only need a little for it to crisp up!). Then, toast each slice on medium-high heat for about 1-2 minutes per side. Remove the sourdough slices, then cut them into 1-inch-thick squares, and set aside.
- Wipe out the pan, and add a splash of olive oil plus the chopped garlic. Sauté the chopped garlic on medium heat for about 5 minutes, stirring frequently. Turn the heat off, then melt the butter in the skillet as well. Add the parsley, stir it, then leave the garlic butter.
- Build the lobster roll skewers: On each toothpick, add one piece of bread, then a chunk of lobster, plus another piece of bread. It should look like a mini sandwich on the toothpick. Repeat for all of the skewers.
- Remove the garlic butter from the pan, and transfer it to a small dish. Garnish the skewers with a little extra parsley, then add a serving spoon to the butter so guests can drizzle the garlic butter over the lobster skewers before eating. These are best served immediately.
