5-Ingredient Garlic Butter Lobster Roll Skewers

This easy appetizer is the perfect warm-weather treat! You’ll feel like you’re sitting dockside with each bite of these handheld lobster rolls drizzled with garlic butter.

5-Ingredient Garlic Butter Lobster Roll Skewers
Servings: about 12 skewers

Ingredients:

  • 4 tablespoons of butter, divided
  • About 4 slices of sour dough bread, cut 1-inch thick
  • 1 large garlic clove, finely chopped (plus a splash of olive oil, for sautéing)
  • 2 tablespoons of parsley, plus a little more for garnish
  • 1-2 cups of cooked lobster meat from Legal Sea Foods Online Shop, cut into large chunks
  • Toothpicks, for skewers

Instructions:

  1. Divide one tablespoon of softened butter among each slice of the sourdough (you only need a little for it to crisp up!). Then, toast each slice on medium-high heat for about 1-2 minutes per side. Remove the sourdough slices, then cut them into 1-inch-thick squares, and set aside.
  2. Wipe out the pan, and add a splash of olive oil plus the chopped garlic. Sauté the chopped garlic on medium heat for about 5 minutes, stirring frequently. Turn the heat off, then melt the butter in the skillet as well. Add the parsley, stir it, then leave the garlic butter.
  3. Build the lobster roll skewers: On each toothpick, add one piece of bread, then a chunk of lobster, plus another piece of bread. It should look like a mini sandwich on the toothpick. Repeat for all of the skewers.
  4. Remove the garlic butter from the pan, and transfer it to a small dish. Garnish the skewers with a little extra parsley, then add a serving spoon to the butter so guests can drizzle the garlic butter over the lobster skewers before eating. These are best served immediately.
