Blue-Cheese Crusted Filet Mignon

Servings: 4

Ingredients:

  • 4 Filet Mignon Steaks
  • 7-8oz each Salt and Pepper
  • 2 Tbsp Olive Oil
  • Topping:
    • 1/2 Cup Breadcrumbs
    • 2 Tbsp Chopped Fresh Parsley
    • 2 Cloves Garlic, minced
    • 1 Cup Blue Cheese Crumbles
    • 1/2 Tsp Kosher Salt
    • 1/4 Tsp Pepper
    • 2 Tbsp Butter, melted

Instructions:

  1. Preheat the oven to 400°F (200°C) and position a rack in the center.
  2. Generously season the filets with salt and pepper on all sides.
  3. Heat olive oil in a skillet over medium-high heat until shimmering. Sear the steaks on both sides until nicely browned, about 2-3 minutes per side.
  4. While the steaks are searing, combine breadcrumbs, parsley, garlic, blue cheese crumbles, salt, pepper, and melted butter in a small bowl.
  5. Transfer the seared steaks to a baking dish. Evenly distribute the blue cheese mixture over each steak, pressing gently to adhere.
  6. Place the dish in the preheated oven and bake for 10-15 minutes until the steak reaches your desired doneness: 125°F (52°C) for rare, 135°F (57°C) for medium-rare, and 145°F (63°C) for medium.
  7. Once done, remove the baking dish from the oven and let the steaks rest for a few minutes before serving.
