Ingredients:
- 4 Filet Mignon Steaks, 7-8oz each
- Salt and Pepper
- 2 Tbsp Olive Oil
- Topping:
- 1/2 Cup Breadcrumbs
- 2 Tbsp Chopped Fresh Parsley
- 2 Cloves Garlic, minced
- 1 Cup Blue Cheese Crumbles
- 1/2 Tsp Kosher Salt
- 1/4 Tsp Pepper
- 2 Tbsp Butter, melted
Instructions:
- Preheat the oven to 400°F (200°C) and position a rack in the center.
- Generously season the filets with salt and pepper on all sides.
- Heat olive oil in a skillet over medium-high heat until shimmering. Sear the steaks on both sides until nicely browned, about 2-3 minutes per side.
- While the steaks are searing, combine breadcrumbs, parsley, garlic, blue cheese crumbles, salt, pepper, and melted butter in a small bowl.
- Transfer the seared steaks to a baking dish. Evenly distribute the blue cheese mixture over each steak, pressing gently to adhere.
- Place the dish in the preheated oven and bake for 10-15 minutes until the steak reaches your desired doneness: 125°F (52°C) for rare, 135°F (57°C) for medium-rare, and 145°F (63°C) for medium.
- Once done, remove the baking dish from the oven and let the steaks rest for a few minutes before serving.
