Ingredients:
- 2 Russet potatoes
- Splash of olive oil
- 2 tablespoons of mayonnaise
- 2/3 cup of sour cream
- 1/4-1/2 teaspoon of Legal Sea Foods Famous Cajun Rub (to taste)
- 3/4 cup of sharp shredded cheddar, divided
- Sea salt and black pepper, as desired
- Scallions, for garnish
Instructions:
- Preheat the oven to 400 degrees Fahrenheit. Poke a series of holes in both sides of the potatoes with a fork, then drizzle each with a little olive oil. Bake them for 45-50 minutes or until they’re fork tender.
- Meanwhile, in a large bowl, combine the mayonnaise, sour cream, Cajun seasoning and 1/2 cup of shredded cheddar. Season with salt and pepper as desired. Mix well to combine, then set aside.
- One the potatoes are done, let them cool for 5 minutes, then slice them open down the middle. Carefully scoop out the inside of the potato—make sure the skin stays intact—and add it into the bowl with the Cajun mixture. Then, mash the potatoes in with the mixture, and once it’s all fully combined, carefully add the potato mixture back into the skins.
- Top them with the remaining 1/4-cup of cheddar cheese, plus a little extra Cajun seasoning, and bake for 10 additional minutes. Remove potatoes from the oven, garnish them with scallions for a little color, then serve.
