Ingredients:
- 1 lb cooked Lobster Meat, cut into bite-sized chunks
- 2 tbsp butter, divided
- 1/4 cup panko breadcrumbs
- 1 tbsp chives, chopped
- 1 small shallot, finely diced
- 8 oz cream cheese
- 1/4 cup Greek yogurt or sour cream
- 1/4 cup mayo
- 1 cup shredded Gruyère
- 1/2 cup grated Parmesan
- 2 tsp garlic powder
- 1/2 tsp Old Bay seasoning
Instructions:
- Heat a large pan to medium-high. Melt 1 tbsp butter and add panko breadcrumbs. Stirring often, toast for 2-3 minutes until golden. Stir in chives and season with salt and pepper to taste. Transfer mixture to a small bowl and set aside.
- Reduce heat to medium-low. Melt 1 tbsp butter and add shallots. Sauté for 4-5 minutes and stir in cream cheese, Greek yogurt, mayo, Gruyère, and Parmesan. Once melted, stir in garlic powder, Old Bay, and lobster meat.
- Once mixture is combined and melted, transfer to serving dish. Sprinkle panko mixture on top.
- Serve immediately with crackers or chips of your choice.
