Cheesy Lobster Dip

Cheesy Lobster Dip
Servings: 5-6

Ingredients:

  • 1 lb cooked Lobster Meat, cut into bite-sized chunks
  • 2 tbsp butter, divided
  • 1/4 cup panko breadcrumbs
  • 1 tbsp chives, chopped
  • 1 small shallot, finely diced
  • 8 oz cream cheese
  • 1/4 cup Greek yogurt or sour cream
  • 1/4 cup mayo
  • 1 cup shredded Gruyère
  • 1/2 cup grated Parmesan
  • 2 tsp garlic powder
  • 1/2 tsp Old Bay seasoning

Instructions:

  1. Heat a large pan to medium-high. Melt 1 tbsp butter and add panko breadcrumbs. Stirring often, toast for 2-3 minutes until golden. Stir in chives and season with salt and pepper to taste. Transfer mixture to a small bowl and set aside.
  2. Reduce heat to medium-low. Melt 1 tbsp butter and add shallots. Sauté for 4-5 minutes and stir in cream cheese, Greek yogurt, mayo, Gruyère, and Parmesan. Once melted, stir in garlic powder, Old Bay, and lobster meat.
  3. Once mixture is combined and melted, transfer to serving dish. Sprinkle panko mixture on top.
  4. Serve immediately with crackers or chips of your choice.
