Chimichurri Steak Tips with Pearled Couscous

This steak tip recipe is easy to put together and bursting with flavor from the chimichurri sauce! Enjoy with pearled couscous on the side.

Chimichurri Steak Tips
Servings: 2

Ingredients:

  • 1lb of New England Style Steak Tips

Steak Marinade

  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • ½ salt
  • ¼ pepper
  • ¼ onion powder
  • ½ garlic powder

Chimichurri Sauce

  • 1 small shallot, diced
  • ¾ cup parsley, chopped
  • 1 garlic clove, minced
  • 1 tsp oregano
  • ½ tsp pepper
  • ½ tsp red pepper flakes
  • 1 tsp salt
  • ⅓ cup olive oil
  • 3 tbsp red wine vinegar

Instructions:

  1. Mix the ingredients for the steak marinade. Add the steak tips and marinate for at least an hour.
  2. Combine the dry chimichurri ingredients (everything besides the olive oil and red wine vinegar) in a food processor. Pulse until chopped and combined.
  3. Stir in the olive oil and red wine vinegar to the pulsed parsley mixture.
  4. Preheat your grill.
  5. Grill the steak tips for 2-3 minutes on each side until the steak is medium rare.
  6. Drizzle the chimichurri sauce on top and serve with pearled couscous.
  7. Optional: Add 2 tbsp of the chimichurri sauce to the couscous for added flavor.
