Chipotle Salmon with Mango Avocado Salsa

This salmon recipe is super easy to put together (it can be made in under 20 minutes) making it a great option during the week. This dish is packed with flavor and does not disappoint!

Servings: 2

Ingredients:

  • (2) 6oz Salmon Filets

Marinade

  • Zest of 1 lime
  • Juice of 1 lime
  • 1 tsp chili powder
  • 1 tbsp honey
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp pepper

Salsa

  • 1 mango, cubed
  • Juice of 1 lime
  • 1 avocado, chopped
  • 1/2 cup cilantro, chopped
  • 1 jalapeno, seeded and diced
  • 2 tbsp chopped red onion
  • Salt to taste

Instructions:

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Whisk together all the marinade ingredients in a bowl. The texture will be thick.
  3. Pat the salmon dry with paper towels and place skin side down on parchment paper.
  4. Coat the salmon filets with the marinade and place the filets + parchment paper on a baking sheet.
  5. Bake in the oven for 10+ minutes (depending on the thickness of the salmon filets), broiling for the last minute.
  6. While the salmon is baking, chop and mix the ingredients for the mango avocado salsa.
  7. Serve the salmon filets with rice and top with the mango avocado salsa.
