This salmon recipe is super easy to put together (it can be made in under 20 minutes) making it a great option during the week. This dish is packed with flavor and does not disappoint!

Ingredients:
- (2) 6oz Salmon Filets
Marinade
- Zest of 1 lime
- Juice of 1 lime
- 1 tsp chili powder
- 1 tbsp honey
- 1 tsp cumin
- ½ tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp pepper
Salsa
- 1 mango, cubed
- Juice of 1 lime
- 1 avocado, chopped
- 1/2 cup cilantro, chopped
- 1 jalapeno, seeded and diced
- 2 tbsp chopped red onion
- Salt to taste
Instructions:
- Preheat oven to 400 degrees Fahrenheit.
- Whisk together all the marinade ingredients in a bowl. The texture will be thick.
- Pat the salmon dry with paper towels and place skin side down on parchment paper.
- Coat the salmon filets with the marinade and place the filets + parchment paper on a baking sheet.
- Bake in the oven for 10+ minutes (depending on the thickness of the salmon filets), broiling for the last minute.
- While the salmon is baking, chop and mix the ingredients for the mango avocado salsa.
- Serve the salmon filets with rice and top with the mango avocado salsa.
