Ingredients:
- 1 lb. of cooked Lobster Meat, cut into bite-sized chunks
- 8 oz pasta of choice
- 1 cup heavy cream
- 1/2 cup grated or shredded parmesan
- 2 tbsp butter, divided
- 3 tbsp tomato paste
- 1 shallot, diced
- 4 garlic cloves, minced
- 2 tsp dried basil
- 2 tsp dried parsley
- Black pepper, to taste
- Crushed red pepper, to taste
- Salt, to taste
Instructions:
- Cook pasta according to package instructions to al dente. Reserve 1/2 cup pasta water.
- Heat a large sauté pan to medium. Melt 1 tbsp butter. Add shallot and garlic. Sauté for 2-3 minutes. Mix in tomato paste. Cook for 2-3 minutes, stirring frequently so it does not burn.
- Stir in heavy cream until it is fully combined with the tomato paste. Add basil, parsley, crushed red pepper, black pepper, and a pinch of salt. Stir until combined. Reduce heat to low and cook 2-3 minutes. Turn off heat.
- Stir in pasta, lobster meat, and 1 tbsp butter. Stir in parmesan. If the mixture is too thick, add a splash of pasta water. Repeat until desired consistency is reached.
- If desired, garnish with fresh parsley.
