Creamy Lobster Pasta

Creamy Lobster Pasta
Servings: 3-4

Ingredients:

  • 1 lb. of cooked Lobster Meat, cut into bite-sized chunks
  • 8 oz pasta of choice
  • 1 cup heavy cream
  • 1/2 cup grated or shredded parmesan
  • 2 tbsp butter, divided
  • 3 tbsp tomato paste
  • 1 shallot, diced
  • 4 garlic cloves, minced
  • 2 tsp dried basil
  • 2 tsp dried parsley
  • Black pepper, to taste
  • Crushed red pepper, to taste
  • Salt, to taste

Instructions:

  1. Cook pasta according to package instructions to al dente. Reserve 1/2 cup pasta water.
  2. Heat a large sauté pan to medium. Melt 1 tbsp butter. Add shallot and garlic. Sauté for 2-3 minutes. Mix in tomato paste. Cook for 2-3 minutes, stirring frequently so it does not burn.
  3. Stir in heavy cream until it is fully combined with the tomato paste. Add basil, parsley, crushed red pepper, black pepper, and a pinch of salt. Stir until combined. Reduce heat to low and cook 2-3 minutes. Turn off heat.
  4. Stir in pasta, lobster meat, and 1 tbsp butter. Stir in parmesan. If the mixture is too thick, add a splash of pasta water. Repeat until desired consistency is reached.
  5. If desired, garnish with fresh parsley.
