Filet Mignon with Caramelized Apple-Onion Sauce

Filet Mignon with Caramelized Apple-Onion Sauce
Servings: 2

Ingredients:

  • (2) 8oz Signature Filet Mignons, thawed
  • Salt and pepper
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 garlic cloves, peeled and smashed

Roasted Vegetables

  • 2 large carrots, peeled
  • 2 large parsnips, peeled
  • 1 large sweet potato, peeled
  • 3 tbsp olive oil
  • 1 tbsp chopped fresh sage
  • 1 tbsp chopped fresh thyme
  • 1 tsp chopped fresh rosemary
  • 1 tsp salt
  • 1/2 tsp pepper

Caramelized Apple-Onion Sauce

  • 2 tbsp unsalted butter
  • 1 large yellow onion, thinly sliced
  • 2 medium apples (Granny Smith and/or Honeycrisp), peeled, cored, and diced
  • 2 tbsp brown sugar
  • 3/4 cup apple cider or apple juice
  • 1/4 cup heavy cream
  • Salt and pepper, to taste

Instructions:

  1. Pat filet mignons dry, season generously with salt and pepper, and let rest at room temperature for 1 hour. Preheat the oven to 400°F about 15 minutes into the resting.
  2. Cut carrots, parsnips, and sweet potato into 1” pieces. In a large bowl, combine vegetables with olive oil, herbs, salt, and pepper.
  3. Spread on a parchment-lined baking sheet and roast for 30-35 minutes, turning halfway, until tender and golden.
  4. When vegetables are nearly done, heat butter and oil in a large cast iron skillet over medium-high heat until foaming. Add steaks, garlic, and herb sprigs. Sear steaks for 3 minutes on each side, continuously spooning the juices over them to prevent the butter from burning.
  5. Remove aromatics, then transfer the skillet to the oven for about 5 minutes for medium-rare (adjust for desired doneness). Let the steaks rest on a cutting board.
  6. While steaks are in the oven, melt butter in a skillet over medium heat and add onions. Cook for about 5 minutes, stirring occasionally, until they start to caramelize.
  7. Stir in diced apples and cook for 3 minutes. Stir in brown sugar and cook undisturbed for 2 minutes, then stir and cook another 2 minutes.
  8. Add apple cider and simmer over low heat until reduced by half, about 3 minutes. Stir in heavy cream and simmer for 1 minute. Blend in a food processor or blender until smooth, then season with salt and pepper to taste.
  9. Spread about 1/4 cup of apple-onion sauce on each plate. Top with sliced filet and place vegetables alongside. Garnish with a sprig of thyme and serve with additional sauce if desired.
