Flatbread Pizza with Salmon

Every day is pizza day! Originally created to celebrate US National Pizza Week, we believe this flatbread pizza is a great option irrespective of reason or season. Topped with luscious, flaky Cajun seasoned Legal Sea Foods salmon and with a plethora of veggies, this is a delight for pizza lovers and seafood aficionados alike. Serve with vibrant greens for the ultimate wholesome indulgence!

Flatbread Pizza with Organic Salmon

Servings: 4

 

Ingredients:

  • 4 Legal Sea Foods Salmon Filets, thawed as per package instructions, and pat dried
  • 4 medium-size flatbreads
  • 2 medium-size zucchini, cut crosswise into 1/4in slices
  • 1/2 lb sliced mushrooms
  • 1 medium-size onion, sliced lengthwise into thin strips
  • 1 cup roasted red peppers (drained if from a jar), cubed
  • 1 cup whole kernel sweet corn
  • 1 cup sliced kalamata olives
  • 1 cup pizza sauce + extra, if needed
  • 1/2 lb grated mozzarella
  • 1/2 cup freshly grated Italian hard cheese
  • 1/2 cup neutral tasting oil (such as avocado oil) + extra, if needed
  • 1 tbsp Cajun seasoning
  • 1 tsp pizza seasoning
  • Salt and pepper to taste
  • Mixed greens or spinach, washed and pat dried (optional)

Instructions:

  1. Place the sliced zucchini, mushrooms, and onion in a large mixing bowl. Pour 1/4 cup oil and sprinkle salt and pepper to taste. Toss to coat uniformly, adding more oil if needed.
  2. Heat 1 tbsp oil in a medium-size Place the veggies above in the skillet (one category at a time, avoiding overcrowding) and cook for 2 minutes per side or until golden-brown or translucent, adding oil in stages, as/if needed. Remove veggies from skillet when cooked, and set aside on a large plate.
  3. Preheat oven to Place salmon filets in a bowl, and rub with Cajun seasoning, ensuring even coating. Let filets rest for 10 minutes, then remove from bowl and place on a medium baking pan covered with parchment paper. Bake salmon for 7 minutes. Take out of oven and place on a plate or a medium-size bowl. Remove skin and shred salmon into flakes using a fork. Set aside.
  4. Place flatbreads on a large baking pan covered with parchment Spread an even layer of pizza sauce on each. Top evenly with onion, zucchini, olives, mushrooms, peppers, sweet corn, salmon, mozzarella, and a sprinkle of pizza seasoning. Bake for 5-7 minutes or until salmon turns opaque. Watch carefully since flaked salmon cooks fast!
  5. Remove pizzas from oven and top with grated Italian hard cheese. Serve hot, with mixed greens or spinach, if desired.
