Honey Sriracha Salmon Lettuce Cups

Servings: 2

Ingredients:

  • (2) 6oz Salmon Filets

 Marinade (use half for the marinade and save the other half to pour at the end)

  • 2 tbsp honey
  • Juice of 1 lime
  • 2 tbsp soy sauce
  • 2 cloves of garlic, minced
  • 1 tsp sesame oil
  • 1 tsp rice vinegar
  • 1 tbsp sriracha

 Lettuce Cups

  • Lettuce (romaine or Boston lettuce)
  • Cooked white rice
  • 1 avocado, diced
  • Sliced jalapeño
  • Carrot ribbons
  • Sliced Persian cucumber
  • Green onion
  • Cilantro
  • Sesame seeds

 Instructions:

  1. Preheat the oven to 375 degrees.
  2. Remove the skin from the salmon and dice into 1-inch pieces.
  3. Mix the marinade ingredients. Pour half into a smaller bowl to save for later. With the remaining marinade, pour over the salmon bites and mix.
  4. Lay the salmon pieces onto parchment paper over a baking sheet.
  5. Bake the salmon bites for 8 minutes, then broil for 3 minutes to get crispy.
  6. Pour the remaining marinade over the cooked salmon bites.
  7. Take the lettuce, add cooked white rice, and top with the salmon bites. Add the remaining toppings (jalapeño, carrots, cucumbers, green onion, cilantro and sesame seeds).
