Ingredients:
- (2) 6oz Salmon Filets
Marinade (use half for the marinade and save the other half to pour at the end)
- 2 tbsp honey
- Juice of 1 lime
- 2 tbsp soy sauce
- 2 cloves of garlic, minced
- 1 tsp sesame oil
- 1 tsp rice vinegar
- 1 tbsp sriracha
Lettuce Cups
- Lettuce (romaine or Boston lettuce)
- Cooked white rice
- 1 avocado, diced
- Sliced jalapeño
- Carrot ribbons
- Sliced Persian cucumber
- Green onion
- Cilantro
- Sesame seeds
Instructions:
- Preheat the oven to 375 degrees.
- Remove the skin from the salmon and dice into 1-inch pieces.
- Mix the marinade ingredients. Pour half into a smaller bowl to save for later. With the remaining marinade, pour over the salmon bites and mix.
- Lay the salmon pieces onto parchment paper over a baking sheet.
- Bake the salmon bites for 8 minutes, then broil for 3 minutes to get crispy.
- Pour the remaining marinade over the cooked salmon bites.
- Take the lettuce, add cooked white rice, and top with the salmon bites. Add the remaining toppings (jalapeño, carrots, cucumbers, green onion, cilantro and sesame seeds).
