Lemon Lobster Pasta

This Lemon Lobster Pasta is the ultimate pasta dish! The sweetness of the lobster and cherry tomatoes is paired with a light butter lemon pasta sauce.

Lemon Lobster Pasta
Servings: 6

Ingredients:

  • 2 lbs of Lobster Meat
  • 1 box of linguine (spaghetti or fettuccine works as well)
  • 1 ½ cups cherry tomatoes, sliced in half
  • 3 garlic cloves, minced
  • 1 shallot diced
  • ½ tsp of red pepper flakes
  • 4 tbsp unsalted butter
  • ½ cup chopped Parsley/basil
  • ½ cup broth (or pasta water) + more if needed
  • Zest of 1 lemon
  • Juice of 1 lemon
  • ¼ tsp fresh cracked pepper

Instructions:

  1. Defrost the lobster meat.
  2. Bring a pot of water to a boil and add your box of linguine. Cook the pasta following the directions on the box, until it is al dente.
  3. Add 4 tbsp of unsalted butter to a pan over medium heat.
  4. Once the butter is melted, add in your chopped shallot and minced garlic
  5. Stir and cook for 3-4 minutes until fragrant.
  6. Add the cherry tomatoes and red pepper flakes, stir, and cook for another 3-4 minutes.
  7. Stir in lemon zest, lemon juice, and broth, and simmer for 2-3 minutes.
  8. Turn off the heat and add your lobster meat and cooked pasta. Stir to combine then add in your chopped parsley.
