Ingredients:
- 1 lb. of Lobster Meat, cooked and cut into bite-sized chunks
- (1) 12-pack Hawaiian rolls
- 1/4 cup mayonnaise
- 1/4 cup celery, finely diced
- 2 tbsp chives, divided
- 1 tbsp fresh lemon juice
- 1/2 tsp Old Bay seasoning
Instructions:
- Make the crostinis: Preheat oven to 300°F. Slice hawaiian rolls lengthwise into thirds. Place the slices onto a baking sheet, cut side up. Bake 14-16 minutes, until toasted.
- Make the lobster salad: In a medium mixing bowl, combine the mayonnaise, celery, 1 tbsp chives, lemon juice, and Old Bay. Mix in lobster meat until fully coated.
- Top the crostinis with the lobster salad and sprinkle on remaining chives.
- Lobster salad can be stored in an air tight container in the refrigerator up to 2 days.
