Ingredients:
- 1 pound of New England Style Steak Tips
Chimichurri Sauce
- 1 cup of fresh parsley leaves
- 1/2 cup of fresh cilantro leaves
- 1/2 cup of olive oil, plus a little more for cooking the steak
- 1 clove of garlic
- 5-7 Calabrian chili peppers (you can add more or less, depending on how much spice you want)
- Sea salt
- Black pepper
Instructions:
Spicy Chimichurri
- In a blender, combine parsley, cilantro, olive oil, garlic, and Calabrian chili peppers; add a little sea salt and black pepper, then blend.
- Taste, and add more salt and pepper as needed.
- Set the sauce aside.
Steak Tips
- Pat the steak tips dry, then season all sides generously with sea salt and set aside.
- Add a little olive oil to a pan, then heat on medium for 2-3 minutes.
- Add the steak, and cook it for 4-5 minutes, flipping once halfway between.
- Make sure the steak has a good sear on both sides; if the pieces are thick, cover the steak with a lid for 1 minute to cook the sides. (The steak should be medium-rare, but keep it on the heat longer if desired).
- Remove the steak, then plate it, and top it with the chimichurri sauce. Enjoy!
