New England Steak Tips in Spicy Chimichurri Sauce

Chimichurri Steak Tips

Servings: 2-3

Ingredients:

  • 1 pound of New England Style Steak Tips

Chimichurri Sauce

  • 1 cup of fresh parsley leaves
  • 1/2 cup of fresh cilantro leaves
  • 1/2 cup of olive oil, plus a little more for cooking the steak
  • 1 clove of garlic
  • 5-7 Calabrian chili peppers (you can add more or less, depending on how much spice you want)
  • Sea salt
  • Black pepper

Instructions:

Spicy Chimichurri

  1. In a blender, combine parsley, cilantro, olive oil, garlic, and Calabrian chili peppers; add a little sea salt and black pepper, then blend.
  2. Taste, and add more salt and pepper as needed.
  3. Set the sauce aside.

Steak Tips

  1. Pat the steak tips dry, then season all sides generously with sea salt and set aside.
  2. Add a little olive oil to a pan, then heat on medium for 2-3 minutes.
  3. Add the steak, and cook it for 4-5 minutes, flipping once halfway between.
  4. Make sure the steak has a good sear on both sides; if the pieces are thick, cover the steak with a lid for 1 minute to cook the sides. (The steak should be medium-rare, but keep it on the heat longer if desired).
  5. Remove the steak, then plate it, and top it with the chimichurri sauce. Enjoy!
