Poached Salmon with Dill Sauce

The bright and refreshing taste of fresh dill makes this sauce the perfect addition to our salmon filet. Serve this dill sauce warm or cold.

Ingredients:Â
- 2/3 cup chopped onion, carrots and celeryÂ
- 2 – 3 tsp olive oilÂ
- 1 qt waterÂ
- ½ cup white wineÂ
- Salt and pepperÂ
- 4 salmon filetsÂ
 Dill sauce:Â
- ½ cup mayonnaiseÂ
- 2 T plain yogurtÂ
- 2 T lemon juiceÂ
- 1 tsp dill weedÂ
 Instructions:Â
- Sauté chopped onion, carrot and celery in olive oil for 5 minutes.Â
- Add water, wine, salt and pepper to pan.Â
- Wash and pat dry salmon and arrange in shallow glass baking dish. Cover with liquid and vegetables.Â
- Bake for 20 minutes in 425-degree preheated oven. Remove from oven and cool in broth.Â
- While cooling, mix together dill sauce ingredients.Â
- Garnish with a sliced lime
- Serve warm or cold, coated with sauce.Â
