This delicious salmon orzo pasta salad is the easiest spring recipe!

Ingredients
- 4 servings of orzo
- [1 tablespoon of olive oil]
- 2 organic salmon fillets
- [Sea salt + black pepper, to taste]
- 2 cups of fresh, roughly chopped spinach
- 1/3 cup of chopped red onion
- 1/3 cup of a good-quality store-bought lemon vinaigrette
Instructions
- Cook orzo according to package instructions.
- In the meantime, add the olive oil to a pan, and heat it on medium-high for 2 minutes.
- Pat your salmon dry with a paper towel, then season it with a little sea salt.
- Add the salmon, skin-side down, into the oiled pan, and cook for 4-5 minutes per side or until it’s opaque and flakes easily with a fork.
- Let the salmon rest for 5 minutes, then flake it into bite-sized pieces; drain the orzo and rinse it with cold water to quickly cool it.
- Add the orzo to a large serving bowl, then add the spinach, red onion, salmon, lemon vinaigrette, plus salt and pepper. Toss it, then serve.
Tip: If you don’t plan to serve it right away, set aside a little extra vinaigrette to re-dress it before serving!
