Ingredients:
- 2 Cups All-purpose Flour
- 1 1/2 Teaspoons Baking Powder
- 1/4 Teaspoon Baking Soda
- 1/2 Teaspoon Salt
- 2 Tablespoons Brown Sugar
- 1 1/4 Cups Mild or Medium Cheddar Cheese, shredded
- 6 Slices Cooked Bacon, crispy and finely chopped
- 1/3 Cup Garlic Herb Butter, melted
- 1 Cup Whole Milk, room temperature
- 1 Large Egg, room temperature
Instructions:
- Preheat oven to 400°F/204°C and grease or line a 12-cup muffin tin.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, and brown sugar.
- Stir in shredded cheddar and bacon into the flour mixture.
- In a medium bowl, whisk together melted butter and whole milk until combined. Add the egg and whisk until well blended.
- Fold half of the wet mixture into the dry ingredients until mostly incorporated, then fold in the remaining wet mixture until just combined and no streaks of flour remain; the batter will be thick and lumpy.
- Fill each muffin slot 3/4 full with batter.
- Bake on the center rack for 5 minutes, then reduce heat to 375°F/190°C and continue baking for an additional 10-15 minutes. Check for doneness with a toothpick; the muffins may not brown significantly due to low sugar content.
- Allow to cool on a wire rack for 5 minutes before removing the muffins from the pan. Serve warm or at room temperature. Optionally, brush the tops of the muffins with some additional melted garlic butter for an added pop of flavor.
