Spicy Lobster Wood Fired Pizza

Ingredients:

Dough
  • Use your favorite dough recipe, or store bought would be fine as well!
    Sauce
    • 1 can Whole Peeled San Marzano Tomatoes
    • Crush by hand in the pot and set to low heat
    • Add 1 teaspoon of salt
    • 1 tablespoon of crushed red pepper flakes
    • Stir and warm for 5 minutes the stovetop

      Instructions:

      Sauce

        1. In small pot, melt 1/2 stick of butter and add freshly chopped parsley. Pour over 1 cup of cooked lobster meat and let it marinate while you heat up the oven.
        2. Heat wood fired pizza oven to 800 degrees or kitchen oven to 500 degrees.

        Pizza

        1. Stretch the dough into a 12 inch circle pushing the air out of the middle by tapping with your fingertips
        2. Spread sauce evenly
        3. Sprinkle an handful of freshly grated mozzarella
        4. Add lobster meat evenly throughout the pizza and top with a little more mozzarella.
        5. Slide pizza into the oven and turn after 45 seconds. In an 800 degree pizza oven you will turn it after 45 seconds and pizza should be fully cooked in 90 seconds
        6. In 500 degree oven this should take about 10 mins during the rack or on a pre heated pizza stone
        7. When the pizza comes out, top with some baby arugula and a drizzle of Calabrian chili oil.
        8. Freshly grate some Parmesan cheese , slice and enjoy.
