Steak & Blue Cheese Salad

Steak Salad with Blue Cheese

Ingredients:

  • (2) 8-ounce Signature Filet Mignons
  • Sea salt or kosher salt
  • Olive oil, for cooking the steak
  • 8 ounces of leafy greens
  • 1 whole pear, sliced thinly and core removed
  • 1/3 cup of thinly sliced red onion
  • 1/2 cup of blue cheese dressing

Instructions:

  1. Let the filet mignon defrost completely overnight in the refrigerator. Then, remove the steak from its packaging, season it generously with salt, and bring it to room temperature for 30 minutes before cooking. 
  2. Add oil to a pan, and let it heat for about 3 minutes on medium-high heat. Then, add the steak—cook time will vary depending on thickness and desired temperature. For medium-rare steak, let the filet mignon cook 4 minutes per side, then sear it for about 20 seconds around the edges. For more well-done steak, you can also finish the steak in a 400-degree Fahrenheit oven for 5 minutes.
  3. Let the steak rest for five minutes, then slice it thinly.
  4. While the steak rests, build the salad: Add the greens, then pears, then onions, and drizzle everything with blue cheese dressing. Top the salad with the steak, and season with salt and pepper if desired.
