Ingredients:
- (2) 7-8oz Signature Filet Mignons
- (2) 5oz Gulf of Maine Lobster Tails
- 4 tbsp salted butter, softened to room temp
- 1 tbsp chopped parsley
- 2 garlic cloves minced
- ½ lemon wedge
- Salt & pepper to taste
- Optional: cooked green beans to serve alongside the meal
Instructions:
- Preheat your oven to 400 degrees Fahrenheit.
- About 30 minutes before cooking, remove your steaks from the fridge and pat dry with paper towels. Season your filets with salt and pepper on each side.
- Combine the softened butter, chopped parsley, and garlic cloves in a bowl.
- Butterfly the lobster tails by cutting the hard tail with kitchen shears down to the fin (careful not to cut through the tail). Carefully pull open the shell and loosen the lobster meat to rest out of the shell.
- Place the lobster tails on a baking sheet covered in tin foil.
- Take half of the butter mixture and melt it in the microwave. Spread the melted butter over the lobster tails and then squeeze the lemon wedge on top.
- Place the tails in the oven and cook for 7-9 minutes, or until the lobster reaches 145 degrees.
- Meanwhile, heat a cast iron skillet over medium heat. Take 1 tbsp of the butter mixture and let it melt in the skillet before adding your steaks.
- Cook the filets for 2 minutes on each side to get a nice sear.
- Transfer to the oven and cook for an additional 6-8 minutes until you hit your preferred readiness.
- Serve the lobster tails and filets with your vegetable of choice.
