Lobster Tomalley

The green substance that comes out of the body of the lobster when it is cracked is called the tomalley. Some consider it a delicacy and full of flavor, but it’s important to note that because the tomalley is the liver and pancreas of the lobster, it acts as a natural filter for the pollutants in the environment. While savoring tomalley in moderation can be a true culinary adventure, we advise caution when consuming it in large quantities.
