Ingredients:
- 2 Center Cut Cod Loins
- 4 slices bacon, chopped
- 1/2 small onion, chopped
- 1 garlic clove, minced
- 1 cup panko breadcrumbs
- 2 Roma tomatoes, chopped
- 1/4 cup fresh parsley, chopped
- 1 lemon juiced, divided
- Salt and pepper
- 4 tablespoons melted clarified butter, divided
Instructions:
- Partially cook the bacon in a skillet until just starting to brown. Add the onion and garlic. Continue cooking until browned and crispy.
- Remove from heat and add the breadcrumbs, tomatoes and parsley. Squeeze half of a lemon over top and mix to combine.
- Add the cod to a baking dish and squeeze the other lemon half over top of each piece. Sprinkle with salt and pepper and drizzle 2 tablespoons of clarified butter over top.
- Top with the breadcrumb mixture and drizzle the remaining clarified butter over the breadcrumbs.
- Bake in the oven at 400 degrees for about 15 minutes until the top is crispy and golden.
