Garlic Butter Shrimp Rolls

Garlic Butter Shrimp Rolls
Servings: 2-3

Ingredients:

  • 1 package of Colossal Raw Shrimp
  • 2-3 top-sliced rolls (depending on the roll size; aim for 6-8 shrimp per roll)
  • 4 tablespoons of Garlic Herb Butter
  • A splash of olive oil, for sautéing shrimp
  • 2 tablespoons of freshly grated Parmesan
  • A squeeze of lemon juice
  • Fresh parsley, for garnish

Instructions:

  1. Let the shrimp fully defrost before cooking; remove their tails as well. Then, lay them out on paper towels, and press another paper towel on top to absorb some moisture (this will help them get a good sear). Set the shrimp aside.
  2. Meanwhile, distribute 2 tablespoons of garlic herb butter among both sides of each roll. Add the rolls to a large skillet, and toast them on medium heat for 2-3 minutes per side or until golden brown.
  3. Remove the rolls, then add a splash of olive oil to the pan. Sear the shrimp in the olive oil on medium-low heat for about 2 minutes. Then, flip them and add 2 tablespoons of garlic herb butter to the pan; let it melt as the shrimp cook, and toss them in the butter. The shrimp need another 2-3 minutes to cook once flipped.
  4. Remove the shrimp from the heat, and stuff them into each roll. Top the rolls with any remaining butter from the pan, then a little fresh Parmesan and a squeeze of lemon juice. Garnish with parsley, if desired.
