Garlic Herb Butter Cornbread

Garlic Herb Butter Cornbread
Servings: 7

Ingredients:

  • ½ cup Garlic Herb Butter, melted
  • 1 cup AP flour
  • 1 cup yellow cornmeal or polenta
  • ¼ cup brown sugar 
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup buttermilk
  • ¼ cup honey
  • 2 large eggs

Instructions:

  1. Preheat the oven to 400° and position a rack in the middle. Preheat a lightly buttered 9” Cast Iron Skillet using Garlic Herb Butter, pouring out any excess and reserve for later. Be careful not to burn the butter in the skillet as it preheats.  
  2. In a large bowl, whisk together the dry ingredients: flour, cornmeal, sugar, baking powder, baking soda and salt.
  3. Make a well in the middle and add the buttermilk, honey and eggs. Mix together well to combine, then add in the melted Garlic Herb butter. Mix again until combined but don’t over mix.
  4. Remove your hot skillet from the oven (remember the skillet will be hot as you continue preparing the cornbread). Now pour the batter into the hot skillet.
  5. Return to the oven to bake about 20 minutes until the cornbread is lightly browned on top. A toothpick should come out clean after being inserted in the center. Let cool, slice and serve.
