Mediterranean Shrimp Orzo Salad

This recipe is perfect for cookouts, picnics, and family events. It's light and fresh, easy to prepare, and will keep you going back for more!

Mediterranean Shrimp Orzo Salad
Servings: 4

Ingredients:

  • 1 lb of Colossal Raw Shrimp, cooked
  • 8oz cooked orzo
  • 1 tbsp olive oil
  • 1/2 cup feta cheese
  • 1 large tomato, chopped
  • 1/2 cup green olives, chopped
  • 1 bunch of parsley, chopped

Dressing

  • 2 cloves garlic
  • 3 tbsp olive oil
  • 3 tbsp apple cider vinegar
  • 1/4 cup fresh dill, chopped
  • 1 tsp pepper
  • 1 tsp salt

Instructions:

  1. In a bowl, whisk together the dressing ingredients and set aside.
  2. Cook the orzo, following the instructions on the bag.
  3. Bring a pan to medium heat and cook your shrimp for 2-3 minutes per side. Once cooked, chop the shrimp into bite-size pieces.
  4. In a large bowl mix together the shrimp, orzo, feta, tomato, green olives, and parsley.
  5. Drizzle the dressing over the salad ingredients and mix.
