Ingredients:
- 1 lb of Colossal Raw Shrimp, cooked
- 8oz cooked orzo
- 1 tbsp olive oil
- 1/2 cup feta cheese
- 1 large tomato, chopped
- 1/2 cup green olives, chopped
- 1 bunch of parsley, chopped
Dressing
- 2 cloves garlic
- 3 tbsp olive oil
- 3 tbsp apple cider vinegar
- 1/4 cup fresh dill, chopped
- 1 tsp pepper
- 1 tsp salt
Instructions:
- In a bowl, whisk together the dressing ingredients and set aside.
- Cook the orzo, following the instructions on the bag.
- Bring a pan to medium heat and cook your shrimp for 2-3 minutes per side. Once cooked, chop the shrimp into bite-size pieces.
- In a large bowl mix together the shrimp, orzo, feta, tomato, green olives, and parsley.
- Drizzle the dressing over the salad ingredients and mix.
