Pumpkin Sage Orzo with Shrimp
Servings: 2

Ingredients:

  • 1 lb. Colossal Raw Shrimp
  • 1 cup dry orzo
  • 3 garlic cloves, minced
  • 1 shallot, diced
  • 1 tbsp, chopped sage leaves
  • 5 cups of low-sodium vegetable broth
  • ½ canned pumpkin puree
  • ½ tsp nutmeg
  • ½ tsp salt and pepper each
  • ¼ cup Parmesan
  • ¼ cup heavy cream

Instructions:

  1. Add 1 tbsp olive oil to a pan over medium heat and cook shrimp for 2 minutes on each side.
  2. Add another tbsp of oil to the pan, add the shallot, garlic, and sage, stirring often for 2-3 min.
  3. Add orzo, and cook for another 3 minutes until golden brown.
  4. Stir in vegetable broth, nutmeg, salt and pepper.
  5. Increase heat and bring to a low boil. Once the liquid is boiling, reduce the heat to medium-low and simmer, stirring occasionally until the orzo is cooked, about 15 min.
  6. Add pumpkin puree, heavy cream, and Parmesan. Stir and cook for an additional 2-3 minutes.
  7. Add the shrimp back to the pan and combine with the orzo.
