Ingredients:
- 1 lb. Colossal Raw Shrimp
- 1 cup dry orzo
- 3 garlic cloves, minced
- 1 shallot, diced
- 1 tbsp, chopped sage leaves
- 5 cups of low-sodium vegetable broth
- ½ canned pumpkin puree
- ½ tsp nutmeg
- ½ tsp salt and pepper each
- ¼ cup Parmesan
- ¼ cup heavy cream
Instructions:
- Add 1 tbsp olive oil to a pan over medium heat and cook shrimp for 2 minutes on each side.
- Add another tbsp of oil to the pan, add the shallot, garlic, and sage, stirring often for 2-3 min.
- Add orzo, and cook for another 3 minutes until golden brown.
- Stir in vegetable broth, nutmeg, salt and pepper.
- Increase heat and bring to a low boil. Once the liquid is boiling, reduce the heat to medium-low and simmer, stirring occasionally until the orzo is cooked, about 15 min.
- Add pumpkin puree, heavy cream, and Parmesan. Stir and cook for an additional 2-3 minutes.
- Add the shrimp back to the pan and combine with the orzo.
