Chimichurri Ingredients:
- 1/2cup olive oil
- 2 tablespoons red wine vinegar
- 1/2 cup finely chopped parsley
- 4 cloves garlic, finely chopped or minced
- 2 Calabrian chilis deseeded and finely chopped
- 3 teaspoons fresh oregano finely chopped
- 1 teaspoon pink Himalayan salt
- 1/2 teaspoon coarse ground green peppercorns
Instructions:
Lobster Tails - smoked at 225 until internal temp of 135 (approx. 20 minutes).
Signature Filets - smoked at 225 until internal of 118, seared for 1 min each at 500 degrees, sliced and topped with fleur de sel.
Shrimp - grilled with berbere for 3 minutes at 400 degrees | everything rested with the included garlic and herb compound butter and topped with homemade chimichurri.
