Street tacos are known for their smaller size and are typically packed with flavor. Enter the Spiced Cod Street Taco. Our version features Cod and a Cajun rub to take your tacos to the next level.
Main Ingredients:
- 2 Center Cut Cod Loins
- 2 Tbs Legal Sea Foods Cajun rub
- 12 mini taco shells
- 1/4 cup cilantro
Chipotle Crema Ingredients:
- 1 chipotle pepper in adobo sauce (pureed)
- 1 cup sour cream
- 1/2 tsp lime zest
- 1 Tbs lime juice
- 1/2 tsp paprika
- kosher salt to taste
Combine above ingredients.
Corn Salsa Ingredients:
- 1/2 cup roasted corn
- 1/2 cup tomato diced
- 2 Tbs red onion diced
- 2 Tbs jalapeno diced
- 2 Tbs lime juice
- kosher salt to taste
- black pepper to taste
Combine above ingredients and let sit for at least 1 hour.
Cabbage Slaw Ingredients:
- 1 cup purple cabbage shredded
- 1/4 cup carrots shredded
- 2 Tbs apple cider vinegar
- 1/2 Tbs olive oil
- 1/4 tsp cumin
- 1/4 tsp coriander
- 1/4 tsp kosher salt
- black pepper to taste
Toss all ingredients, keep refrigerated till ready to serve.
Instructions:
- Cut each cod loin into 6 pieces.
- Sprinkle both sides with Cajun rub.
- Sear on a hot skillet on both sides for 2 to 3 min per side.
- Warm taco shells.
- On each taco shell, place cabbage slaw, seared cod, corn salsa, garnish with chipotle crema and cilantro.
